Dumplings: 2 cups plus several tablespoons flour 2 tsp baking powder 1 tsp salt 1 ¾ cups whole milk Sauce: I large can chicken breast, not drained 2 cans peas, not drained 2 cans evaporated milk Salt, pepper, seasonings to taste (we used about a teaspoon of roasted garlic powder) Directions: Put 2 cups flour, baking powder and salt in a bowl. Stir to combine. Add the milk and stir until it comes together. Add one more tablespoon of flour at a time until the mixture becomes sticky. Using a spoon, drop the mixture by the spoonful into a pot of boiling water, about 6 dumplings per batch. Cook until they float, remove each batch to a bowl or pan. When the final batch finishes cooking, drain the pot and begin with the sauce. Place the chicken and peas, along with their liquid, into the pot. Add the evaporated milk and stir. Season with your choice of spices. Add the dumplings back in and stir everything around to combine. At this point, it will look very soupy, so allow 15-20 minutes on medium heat for the extra liquid to evaporate. When it gets to the desired consistency, stir once again and serve.

Here in the US, we always seem to butt heads over how to handle immigrants brought here as children. Some say, “Send them home.” But, where is home to a youth who came into our nation too young to remember another? What if the youngster saw war and disease in the other nation and came here before the age of majority?
Many of these children enter school alongside those born here. Whether they come from Latino origin under the Deferred Action for Childhood Arrivals (DACA) act in the news or anywhere else, children need to receive equal treatment. Many of them came here when their parents sought to flee violence, disease, and other chaos. The children had no choice, therefore need to stay in the only country they know. They learn English in our schools, some in very excellent fashion. Along the path to learning the language, the students in all levels can apply it in other learning areas. They can learn how literature and other arts using many languages enrich the culture. Later on, the kids can try comparative literature and learn about their parents’ cultures or others they find interesting to see how that influences the family’s new home. These children also must learn the same historical and political lessons as natives do. For this reason, when all students take standardized exams alongside one another, they can graduate together. When everyone graduates, the immigrant children can earn citizenship by passing the state exams or equivalent Advanced Placement ones. After all, our educational system provides younger folks with the same knowledge as those adults taking naturalization courses and exams. Allowing such citizenship gives young arrivals a chance to excel. They can then become productive members of society. If they have not taken all of the requisite courses by high school graduation, college can provide these as general education requirements are met. Have the student substitute a needed English, American history, or government course for something else in required courses list. Then, when the last of these requirements is met, the student can take a naturalization exam rather than a course final to earn citizenship. By writing our government officials, we the citizens can show appreciation for other people. After all, many of them enrich our culture when they come here. They can help later generations join us successfully as well, bringing us all to a greater society. Looking for a simple soup and dessert supper to stay warm? For the soup, I used: 1 lb chicken (can be breast, tenderloins, or thighs), cut into bite sized cubes 2 lb of frozen corn or soup vegetables in any combination 2 boxes of small pasta (alphabet or orzo size works best) 1 Tbsp chopped garlic 4 cups chicken broth Water in 2-cup increments as needed Salt, pepper, and your favorite seasonings to taste (we used Old Bay) Put the broth, garlic, seasonings, and chicken into a 6 quart or larger stock pot. Bring to a boil to par-cook the chicken. Add the vegetables and pasta, continue cooking until chicken is cooked through and pasta is tender. Simmer until you’re ready to eat, adding water 2 cups at a time until it’s as thick or thin as you like. This works well as a soup or a stew. As it yields quite a bit, the extras will also reheat well from the fridge the next day or freeze well for the next weather emergency. The dessert has only 3 ingredients: 1 15-ounce can of peaches in syrup 1 small can of sweetened condensed milk About 8 ounces of dry granola, crushed (preferably a cinnamon or oat based flavor) Cut the peaches into small cubes. Place peaches and syrup in a 9-inch round or 8X8 inch square pan. Add the condensed milk, stir to combine for peaches and cream dessert. Place the crushed granola over the peaches and cream mixture, as one uses a crumble topping on cobbler style dishes. Bake at 350 degrees F for about 30 minutes, until the whole dessert is set and warmed through. Slice and serve with or without whipped cream or vanilla ice cream, depending upon what is on hand. This would also provide a terrific breakfast the morning after it is made, should some be leftover. As we noticed, it does microwave well at a 20 second interval to warm it up after some time in the refrigerator. These forgiving recipes allow a person or family to clean out the kitchen while snowed in, or to use up the ingredients they may not know what to do with before a new shopping trip. They give the cook an option to stretch ingredients into new dishes to feed a household for more than one meal. These recipes also offer the cook an easy level of creating so he or she does not need special expertise, but merely the components, cooking utensils, and time to make them.
